Yuca Salad
Ingredients:
3 Lb. yuca (Frozen by GOYA)
1 tbsp. vinegar
1 tsp. salt
3/4 cup Mayonnaise
1 cup finely chopped red peppers
1/2 cup chopped green onions
1 clove garlic, minced
6 slices Bacon, cooked, crumbled
Preparation:
Cook Yuca according to package instructions, cool completely and cut into 1 inch cubes.
Mix mayo, peppers, onions, garlic and bacon in a large bowl. Add Yuca; mix lightly. Refrigerate until ready to serve.

Hi Friends!
First I would like to thank all of you that help keep this dream growing more and more every week... it has been amazing how God is walking me through this new chapter in my life and I am so pleased that all of you are part of it. you have all been a blessing in my!
Also I want to let you know about some exciting news! I will be teaching several cooking classes in the near future. The classes will help you discover new techniques on how to love what you do in your kitchen as well as how to make it fun and easy.
The first class is FUN with COOKIES, is part of the Leisure Learning curriculum of classes http://www.llu.com/ and will be taking place on Saturday June 6th, at 10:00 am and Sunday July 26 at 10:00 am. If you need more information about the classes please let me know. I am also putting a class together about learning how to cook Traditional Venezuelan Food. I will give you my secrets on how to make delicious crunchy emapnadas,arepas, pastelitos and more.
Remember I am wiling to have a food tasting at your house so, get some friends together for a fun afternoon, I will share some recipes, tips, and of course I will make my delicious coffee; plus the HOST will receive a surprise!

Banana Pudding
Ed's favorite; Many thanks to Diana Acres for this fabulous recipe!
Ingredients
1 (14 ounce) can sweetened condensed milk
1 1/2 cup cold water
1 (4 serving) package instant vanilla pudding mix
2 cups (1 pint) whipping cream, whipped
36 vanilla wafers
3 medium bananas, sliced and dipped in lemon juice
Instructions
In a large bowl, combine condensed milk and water. Add pudding mix; beat until well blended. Chill 5 minutes.
Fold in whipped cream. Spoon 1 cup pudding mixture into 2 1/2 quart glass serving bowl
Top with one-third each of the vanilla wafers, bananas and remaining pudding. repeat layering twice, ending with pudding mixture. Chill thoroughly. Garnish as desired. Store leftovers covered in refrigerator.
