Mushroom & Chicken Cheese Crepes

Creamy delicious mix of mushrooms perfectly combined with roasted chicken and topped with a light
white wine sauce!

Recipe of the week 02/03/2010



Chicha de Arroz:

Chicha (pronounced chee-cha) is a refreshing Venezuelan drink made of rice. Its creamy and delicious and perfect for any occasion.

Ingredients:

1 cup of rice
5 cups water
pinch salt
skin of one lemon
1 canela (cinamon) stick
2 tablespoons real Mexican Vanilla
1 cup sugar
1 can sweet condensed milk
3 cups whole milk
Preparation:
In a medium pot add your water and bring to a boil. Add lemon peel, canela stick and rice and cook until very tender (about 35 minutes); Allow to cool, take the lemon skin and canela stick out and blend using a blender until smooth (if you'd like you can use a colander to obtain a super smooth taste) add the rest of the ingredients and mix well; serve with crushed ice, sprinkle with canela powder and enjoy!

Switching Thursday FOR WEDNESDAY

Mai's Kitchen is switching Thursday for WEDNESDAY! I will send you the menu for the week by Saturday and you can post your order no later than Monday afternoon. Remember Mai's Kitchen is available for catering for any occasion: parties, showers and meetings.

ANNOUNCENMENT


2010 marks the beginning of a new decade! My heart is filled with a lot of new goals and dreams; one of my biggest dreams is to be able to open a very cute restaurant/bakery where I will be cooking my favorite dishes for all of you, baking wonderful delicious desserts, teaching classes; I can just see you all stopping by for a cup of cappuccino and a cupcake to share it with a friend and break the daily routine (deep breath) AMEN! I always remember and pray my favorite Bible verse:

Delight yourself in the Lord and He will give you the desires of your heart! Psalm 37:4...and He is, so this year I will have the opportunity to teach a new class called
LATIN AMERICAN/VENEZUELAN CUISINE: In this class we will make Empanadas (crunchy dumpplings) Arepas (corn meal cakes) Caraotas Negras (black bean soup) Carne 'Mechada (pulled beef) and for dessert Quesillo (cream caramel) this class is scheduled for March 6/2010 at 10:00 AM so mark your calendars and if you would like to attend please e-mail me and I will give you more information. While I am working on accomplishing my dream you are more than welcome to stop by my Kitchen to have a good cup of hot creamy cappuccino....

Recipe of the week 01/27/10


Venezuelan Black Bean Soup

As many of you requested, here is one of my favorite recipes.



INGREDIENTS:
1 16 onz. Can Goya Black Beans

1/2 cup white onion chopped

1 tablespoon chopped garlic

1/4 cup red bell pepper chopped

1/4 cup green bell pepper chopped

small bunch of Cilantro

1/2 teaspoon oregano

1 tablespoon brown sugar

2 tablespoons olive oil

salt/ pepper

2 cups of water


PREPARATION:

In a medium pot heat the oil and lightly brown onion, garlic, peppers add water, black beans and the rest of the ingredients cook slowly until you get a creamy soup about 25 minutes. Delicious on a bed of white rice and topped with some feta cheese crumbs, enjoy :)
